So since its trying to be Summer here, in March which is crazy, and the Strawberries were on sale at Aldi I decided it would be a great time to try out a super simple ice cream recipe. Also no ice cream maker needed! Which is great since my poor little ice cream makers beaters broke and I haven't fixed/replaced them.
Simple Strawberry Ice Cream
Ingredients
2 cups heavy whipping cream
1 can sweetened condensed milk
mix-ins( for me this was sugared strawberries)
Whip the cream until stiff peaks form
I didn't have sweetened condensed milk so I heated evaporated milk with 2/3 cup of sugar until the sugar dissolved.
I chopped about a cup of strawberries then put about 3 tsp of sugar and put them in the fridge. Normally I would have put a bit of lemon juice in with them but I didn't have any.
Then fold the milk/strawberry mixture into the whipped cream and freeze. I stirred the mixture every half hour or so to make sure the strawberries weren't only on the bottom.
Finished yumminess.
When I make this again I would probably just use more whipping cream and just a dash of milk instead of a whole can of sweetened condensed.
